Rhubarb makes a great addition to these soft pillowy cookies. They are similar to an oatmeal raisin cookie, but with the lovely sour flavor from the finely chopped rhubarb.

If you don’t have your own plant, you can typically find it at a local farmers’ market, or even in the frozen section at your grocery store. Watch me make these delicious cookies in the video below.

Ingredients

  • 1 1/2 cups brown sugar
  • 1 cup butter softened
  • 1 teaspoon vanilla
  • 2 eggs room temperature
  • 1 3/4 cups flour
  • 1 3/4 cup quick cooking oats
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cups rhubarb finely diced into 1/4 inch cubes

Instructions

  1. Preheat oven to 375ºF.
  2. In a large bowl, mix brown sugar, butter, vanilla, and egg.
  3. Add flour, cinnamon, salt, baking soda, and baking powder. Beat well until dough forms.
  4. Add rhubarb and stir by hand to mix
  5. Scoop balls of dough and place them on a parchment paper-lined sheet. These cookies will spread.
  6. Bake cookies for 14 minutes or until baked through.
