This crispy salmon bowl makes great use of the air fryer for an easy weeknight dinner. Serve with your favorite vegetables and a drizzle of sriracha mayo. If you like this recipe, be sure to check out the other recipe I made on this episode of Taste Buds, Tuna Poke Bowls.
Ingredients
For the rice
- 1 cup rice, uncooked
- 1 cup water
- 2 tbs seasoned rice vinegar
For the salmon
- 1 lb salmon, skin removed and cut into 1.5 inch chunks
- 1 Tbsp Sriracha mayo
- 1 teaspoon Trader Joes Salmon seasoning
For the bowl
- 1 large avocado, sliced
- 1 large carrot,shredded
- 1/4 cup Daikon radish shredded
- 3 persian cucumbers, sliced
- 1/4 cup red pepper dices or cut into batons
- 2 scallions, diced
- 1 Tbsp black sesame seeds
Instructions
For the Rice
Cook your rice in the instant pot with 1 cup water for 5 minutes on high. Let naturally release for 10 minutes
Add seasoned rice vinegar and fluff with a fork
For the Salmon
Toss the salmon with the mayo and the seasoning. Cook in the air Fryer for 5-7 minutes at 400 until crispy and cooked through
For the Bowl
Put rice in the bowl. Add the salmon on top and arrange the condiments
Top with additional Sriracha mayo if desired
