The month of May signifies the opening of Johnson Island on Burntside Lake. The month of May also means rhubarb pies, rhubarb syrup for gin and tonics, and rhubarb custard bars (we are in Minnesota don’t ya know). If you don’t have your own rhubarb plant, you surely have a friend, neighbor or family member with one, and you should get your hands on some stalks to make all things rhubarb because the season doesn’t last long. Start with these tasty rhubarb custard bars and then explore all kinds of rhubarb recipes.

Ingredients

Crust

  • 2 cups all-purpose flour
  • 3/4 cup powdered sugar
  • 1 c butter
  • 1 tsp vanilla extract

Filling

  • 4 eggs
  • 2 cups sugar
  • 1/2 cup all-purpose flour
  • 1 1/2 tsp salt
  • 4 cups rhubarb, chopped into 1/4 to 1/2-inch pieces

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl mix crust ingredients together. Press crust into a greased 9 x 13-inch pan. Bake for 15 minutes and remove from the oven.
  3. While the crust is baking, beat together the filling ingredients: eggs, sugar, flour, and salt. Stir in rhubarb.
  4. Spoon mixture onto crust. Bake for 45 minutes.
