Tuna Poke Bowl

Tuna poke puts all the ingredients of a delicious sushi roll in a bowl for a quick weeknight dinner. Be sure to try the other recipe I made for this episode of Taste Buds, Crispy Salmon Bowl!

Ingredients

  • 8 oz sushi-grade ahi tuna
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp rice vinegar
  • 1/2 teaspoon honey
  • 2 cups cooked rice
  • 1/2 cup diced cucumber
  • 1/4 cup shredded carrots
  • 1/4 cup shredded Daikon radish
  • 1/2 cup shelled edamame
  • 1 large avocado, peeled and sliced
  • Sriracha mayo
  • 2 teaspons black sesame seeds
  • 1 Tbsp green onion

Instructions

  1. Use a sharp knife to cut tuna into dice. Add tuna, soy sauce, sesame oil, rice vinegar, and honey to a medium bowl. Toss the mixture and let the tuna marinate while you prepare the bowls.
  2. Divide the cooked rice between two bowls. Spoon tuna on one corner of the rice. Surround with a pile cucumber, edamae, and a nest of carrot and Daikon. Spread half of an avocado on top of the bowl. Drizzle with the spicy mayo over the bowl. Sprinle with green onon and black sesame seeds.
