I am obsessed with Rhubarb, and a little Rhubarb Spritz is the perfect way to welcome in spring.

Ingredients
For The Syrup
- 2 cups chopped rhubarb
- 1/2 cup sugar
- 1 cup water
For The Cocktail
- 4 oz rhubarb syrup
- 6 oz Prosecco
- 2 oz club soda
- Orange slice for garnish
Instructions
For the Syrup:
- Combine the rhubarb, sugar, and water in a pan. Bring to a boil, then set to simmer. Stir occasionally for 15-20 minutes until the rhubarb breaks down and is soft and jammy
- Pour the rhubarb mixture through a strainer until the liquid is in the bowl.
- Press the solids with the back of a spoon or a spatula to extract more syrup.
- Pour syrup into a bottle. Refrigerate.
For the Cocktail
- Fill a large glass with ice.
- Add 2 oz rhubarb syrup and top with 3 oz prosecco syrup and stir to combine.
- Top with sparkling water and garnish with an orange slice.
