Refreshing lemonade with rhubarb, lemon, sparkling water and basil in a glass, horizontal

I am obsessed with Rhubarb, and a little Rhubarb Spritz is the perfect way to welcome in spring.

Ingredients

For The Syrup

  • 2 cups chopped rhubarb
  • 1/2 cup sugar
  • 1 cup water

For The Cocktail

  • 4 oz rhubarb syrup
  • 6 oz Prosecco
  • 2 oz club soda
  • Orange slice for garnish

Instructions

For the Syrup:

  1. Combine the rhubarb, sugar, and water in a pan. Bring to a boil, then set to simmer. Stir occasionally for 15-20 minutes until the rhubarb breaks down and is soft and jammy
  2. Pour the rhubarb mixture through a strainer until the liquid is in the bowl.
  3. Press the solids with the back of a spoon or a spatula to extract more syrup.
  4. Pour syrup into a bottle. Refrigerate.

For the Cocktail

  • Fill a large glass with ice.
  • Add 2 oz rhubarb syrup and top with 3 oz prosecco syrup and stir to combine.
  • Top with sparkling water and garnish with an orange slice.
