Caesar Salad with Croutons, Chicken and Pasta • Stephanie Hansen

This Caesar salad comes together quickly and is perfect for a hearty lunch or dinner with croutons, chicken, and pasta. Making your own Caesar dressing is easy and delicious! I highly recommend it.

Ingredients

For the salad

  • 1 12 oz box penne pasta cooked and drained
  • 3 Heads Romaine Lettuce chopped
  • 1 Cup Cooked Chicken chopped
  • 2 Cups Croutons
  • 1/2 Cup Parmesan Cheese grated

For the Dressing

  • 3 anchovy filets
  • 3-4 cloves garlic, grated
  • 1 tsp Worcestershire sauce
  • Lots of cracked black pepper (about 20 cranks from my pepper mill)
  • Juice of one-half lemon (or one-third of a big lemon)
  • 1Tbsp Dijon mustard
  • 3/4 cup mayonnaise (ideally made with olive oil)
  • 1/4 cup freshly grated Parmesan, plus more for serving
  • 2 teaspoons finishing salt to taste

Instructions

  1. Mash the anchovy filets and garlic cloves with a pinch of salt in the bottom of a mixing bowl until they form a paste.
  2. Add Worcestershire, black pepper, lemon juice, and mustard, and mix until fully combined.
  3. Whisk in the mayonnaise and Parmesan. Taste the dressing, adding more lemon juice, pepper, or other components as needed.
  4. Toss the pasta, romaine, chicken croutons, and parmesan cheese with about half of the prepared dressing, adding more incrementally as you see how coated the pasta and leaves get. Finish with more grated Parmesan, black pepper, and finishing salt to taste
