Grapefruit Thyme Spritz

It’s so easy to make your own simple syrup and flavor it with whatever you like. Here I chose to use grapefruit juice and thyme to make a delicious spritz when combined with Cava and St. Germain. Homemade simple syrup will keep for up to a month in the fridge, so you can experiment with other drinks as well.

Grapefruit Simple Syrup

  • ½ cup sugar
  • ½ cup grapefruit juice
  • 1 -2 inch rind of grapefruit peeled with a vegetable peeler
  • 4 sprigs fresh thyme

Grapefruit Thyme Spritz

  • 1.5 oz St. Germain elderflower liqueur
  • 1 oz Grapefruit Rosemary Simple Syrup (See Notes)
  • 3 oz Cava
  • Sparkling water, if desired, for more carbonation

  • Thyme sprigs
  • Grapefruit slices

Grapefruit Simple Syrup

  1. Combine all ingredients in a saucepan over medium heat and bring to a simmer until the sugar is dissolved then take it off the heat and let it sit for 15 minutes to let the herbs infuse the syrup for enhanced thyme flavor.
  2. Pull out rind and sprigs of thyme.
  3. Cool before using. You can store syrup in a jar in the fridge for up to a month.
