This strawberry bread is packed FULL Of strawberry flavor. It calls for chopped fresh strawberries in the bread itself and then freeze dried strawberries ground up into a pretty pink powder and mixed in with the vanilla glaze. 

You can bake this recipe in three mini loaf pans or one standard size. If you bake it in the mini size, keep an eye on them as they’ll be done baking a bit earlier. I love to serve strawberry bread on a white platter with fresh strawberries for garnish.

Ingredients for Strawberry Bread

  • Applesauce: I love to use applesauce in my baked goods. I even make mine in my Instant Pot. It could not be easier.
  • Flour: Of course this recipe calls for flour, but one important thing to remember is to toss your fresh fruit in a bit of flour before adding it into the batter. This prevents the pieces from sinking to the bottom of the bread.
  • Salt: It is so important to use salt when you bake. It balances out the sweet and makes the recipe sing and you’ll never know it’s there.
  • Freeze Dried Fruit: I am loving freeze dried fruit right now. I used Super Garden (affiliate link) brand, which I purchased on Amazon, but you can also find freeze dried fruit at Trader Joe’s and Target stores.

Ingredients

For the bread

  • 3/4 cup granulated sugar
  • 1/2 cup 2% milk
  • 1/3 cup canola oil
  • 1/4 cup applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups diced strawberries
  • 2 tablespoons all-purpose flour

For the glaze

  • 3 Tbsp freeze dried strawberries
  • 2 cups powdered sugar
  • 2 Tbsp cream
  • 1 Tbsp lemon juice

Instructions

  • Preheat the oven to 350ºF.
  • Mix the sugar, milk, oil, applesauce, egg, and vanilla in a medium bowl. In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and mix
  • In a small bowl, toss the cut strawberries with the flour to coat. Mix the strawberries gently into the batter. 
  • Pour the bread batter into a greased 9″x5″ bread pan. Bake at 350 degrees F for 55 minutes (if you’re baking in mini loaf pans, check around 35 minutes). Allow the bread to cool in the pan for 10 minutes, then remove the bread to a wire rack to cool completely.
  • To make the glaze, blend the three Tbsp dried strawberries in a mini food processor until they are finely ground.
  • Combine the strawberry powder with the powdered sugar, cream, and lemon juice until you have a glaze. Add more cream if it’s too thick to drizzle.
  • Drizzle the glaze on the cake with a spoon or flick the drizzle on the cake by using a fork and quickly flicking the glaze back and forth onto the bread.
