Easter Blondies with Cadbury Chocolate Eggs

I love how versatile this blondies recipe is! Depending on the occasion you can add colorful m&ms or other candies. For this occasion I made them with Cadbury milk chocolate eggs (affiliate link). They also have white chocolate chips, which makes them seriously irresistible.

I use an 8-inch square pan (affiliate link) so we get a nice tall bar, but these will also work in a 9-inch square pan if that’s all you have. They’ll just be a bit shorter. A trick to getting these out of the pan super easily is to use parchment paper and also spray it with cooking spray. To make the parchment stay in the pan, I wet it a little bit and then I crinkle it (see me do it in the video below). It’s really helpful for getting the parchment to stay in the pan.

Butter Hack: If your butter is really cold and you need to quickly bring it up to room temperature, I microwave a couple of glasses and then set the stick of butter upright on a plate and put the hot glass over the top. It warms it but not so quickly that the butter melts. Depending on how cold your butter is, you may need to do this a few times.

Cutting equal size bars:If you’re serving these for a special occasion and you want to ensure your bars are all the same size, use a bench scraper (affiliate link) or kitchen ruler!

Ingredients

  • 2 cups + 2 Tbsp all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 1/2 sticks unsalted butter, melted & cooled (or at room temperature)
  • 1 ½ cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cup roughly chopped Cadbury Mini Eggs
  • 1/3 cup white chocolate chips

Instructions

  1. Heat oven to 350°. Spray an 8 x 8 baking pan with cooking spray and then line it with parchment paper.
  2. In a small mixing bowl, combine flour, salt, and baking soda. Set aside
  3. In a bowl of a stand mixer, combine melted and slightly cooled butter and brown sugar. Blend together until combined for 2 minutes.
  4. Add in 1 egg and then blend. Add the other egg and vanilla extract and blend together until combined.
  5. Add in the flour mixture and mix on low speed until combined and no flour pockets remain in the batter. Add the chopped Cadbury Mini Eggs and white chocolate chips. Stir to combine.
  6. Dump batter into the prepared pan and spread out evenly. Sprinkle additional Cadbury Mini Eggs on top and gently press down.
  7. Bake for 35-45 minutes. The edges will be a light golden brown and the middle will look pale. Let cool completely in the pan so they cut properly with crisp edges.
