These tasty scallion pancakes are so quick and easy to make thanks to Korean Crispy Pancake Mix. They are excellent served flavorful nuoc cham (a Vietnamese sauce, recipe below) or with a side of K-Mama sauce. You could also serve these as an appetizer or side dish with my easy kimchi fried rice.
Ingredients
Korean Pancake
- 3 scallions, washed and trimmed
- 2 cups Haioreum Korean Pancake Mix
Nuoc Cham
- 3 tablespoons fish sauce
- 2 tablespoons water
- 2 tablespoons sugar
- 1 1/2 tablespoons fresh lime juice
- 1 teaspoon minced garlic
- 1 Thai chile, minced
Instructions
Korean Pancake
- Prepare scallions by cutting them into 2-inch pieces and slicing each piece lengthwise into thin strips.
- Prepare 2 cups of Haioreum Korean Pancake Mix. Add 1 3/4 cups water and mix.
- Heat up a non-stick pan and add some scallions in a raft about a 2 x 3 square.
- Pour the mixture into a heated pan and spread it thinly
- Cook a few minutes until the bottom of the pancake turns golden brown and crispy. Turn it over with a spatula or flip it.
- A few minutes later, when the bottom of the pancake is crispy and golden brown, flip or turn it over again. Transfer it to a cutting board and cool it down. Cut into bite-size pieces and put them on a plate. Serve with Nuoc Cham for dipping or K-Mama Sauce.
Nuoc Cham
- Combine all ingredients.
- Serve.
