Easy Kimchee Fried Rice

Fried rice is such an easy and versatile recipe for a quick weeknight dinner. And if you’ve never made it before, it’s surprisingly easy when you use store-bought kimchi as the base and jazz it up with Spam or other leftover proteins like cubed pork, tofu, or leftover chicken or ground pork sausage. This easy kimchi fried rice calls for locally made K-Mama Sauce and you can find this chili paste-based sauce at your favorite Korean grocery store, Target, or Amazon. Easy Kimchi Fried Rice

Making fried rice at home is surprisingly easy when you use store-bought Kimchee as the base and jazz it up with Spam or other leftover proteins. K-Mama Sauce is available at your favorite Korean grocery store, Target, and Amazon.

Ingredients

  • 1 Tbsp sesame oil
  • 1/4 teaspoon gochugaru dried chili pepper
  • 1/2 cup white onion, chopped
  • 1/2 cup cubed Spam or other protein
  • 1/3 cup kimchi or other pickled vegetables
  • 1/4 cup K-mama Sauce
  • 1 cup day old or frozen white rice
  • Chopped or pickled jalapeno slices to taste (you can save a few slices to garnish)
  • 1/4 cup green onions (1 Tbsp reserved for garnish)

Instructions

  1. Add oil to skillet with chili pepper and chopped onions. Cook for 3 minutes.
  2. Add Spam and brown until you get some crispy bits.
  3. Add kimchi and any other pickled vegetables and saute with K-Mama Sauce.
  4. Add white rice and mix and combine with pickled jalapeno and garnish with green onions.

Notes

Cubed pork, tofu or leftover chicken or ground pork sausage could all work here.
