The story goes that Teressa Bellissimo created Buffalo Wings in 1964 at the Anchor Bar in Buffalo, New York. She said she created the dish as a late-night snack for her son and his friends by deep-frying leftover chicken wings and tossing them in a mixture of hot sauce and butter. The dish gained popularity locally and eventually became a staple in bars and restaurants nationwide. 

Buffalo chicken has since evolved, and you can find variations of the dish, including buffalo chicken sandwiches, wraps, salads, and more. Now we have Buffalo Chicken Nachos, and now I give you … Buffalo Chicken Chili. If I may say … this is one of my favorite recipes I have made. I went back and forth between using pulled chicken like in my white bean chicken chili, but I settled on ground chicken as I really liked the texture of this chili feeling as close to a game day chili as possible.

Ingredients

  • 1 pound ground chicken
  • 2 Tbsp olive oil
  • 1 medium onion
  • 1/2 cup Red pepper chopped
  • 1/2 cup orange pepper chopped
  • 1/2 cup chopped celery ribs
  • 3 cloves garlic (minced)
  • 2 Tbsp chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 15.5 ounce can drained great northern beans
  • 1 14 oz can chopped tomatoes
  • 1 28 oz can can crushed tomatoes
  • 1 can or bottle beer
  • 1/2 cup Frank’s Red Hot Sauce
  • 1 Tbsp sugar

Fixings

  • Blue cheese crumbles, Sour cream drizzle, chopped green onions

Instructions

  • Heat olive oil in a large stock pot over medium-high heat. Brown the ground chicken, breaking up the meat until cooked through
  • Add onion, peppers, celery, garlic, chili powder, cumin, paprika, salt, and pepper, and cook, stirring until the vegetables soften, about 5 to 6 minutes.
  • Add white beans, canned tomatoes, crushed tomatoes, beer, hot sauce and sugar and bring to a boil and simmer uncovered on medium-low for about 25 to 30 minutes, stirring occasionally.
  • Top with fixings as desired
